Since his teenage years on the southside of Chicago, Mark Walsh aka Bubby has been into barbeque. Growing up in the late 70s and 80s, Mark ate many a charcoal lighter tasting barbeque. He still recalls the impact the first time the low and slow smoke taste found its way into his mouth, when his dad took him to a church parking lot (literally "on the wrong side of the tracks") for some smoked rib tips. "A lot of kids throughout history have found their blues or rock and roll the way I found BBQ" is one of Bubby's more favorite comments.
From eating out of the aquarium style smokers to hitting the worldwide BBQ trail, Bubby has been smoking meat in his own style for years. A meeting with renowned pitmaster Bryan Furman (Food & Wine Best new Chefs 2019) at his B's Cracklin BBQ in Atlanta encouraged Mark and his wife, Kristine, to take the step from a small catering side business to doing their BBQ their way. And so began BubbyQ.
Mark and Kristine, a veteran of every aspect of the food service industry, moved to Kentucky to pursue their dream of starting a food trailer that brings Bubby Q to a new audience. Kristine is the rock of the operation bringing her expertise in management, service, and her love of food to the business. Her dedication to taste inspires Mark's creativity as the pitmaster of BubbyQ!
